Gluten Free Valentine Candy List

I like to see what other options are out there and I found some nice treats along the way that I will share with you. I like these because they actually have some protein and are a more substantial snack.

ALWAYS READ LABELS, PRODUCERS CAN CHANGE INGREDIENTS, SO PLEASE DOUBLE CHECK BEFORE CONSUMPTION.

Yummy Gluten Free Cookies

INGREDIENTS:

  •  1 cup of  Gluten Free All Purpose Flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1/2 cup cane sugar
  • 1/4 cup brown sugar
  • 1/3 cup of
  • 1/3 cup Chocolate Chips
  • 1/4 cup unsweetened applesauce
  • 3 tablespoons non-dairy milk (I like almond milk)
  • 2 tablespoons of oil
  • 2 tablespoons maple syrup
  • 1 teaspoon of vanilla extract

FILLING:

  • 1/2 cup organic non-hydrogenated shortening
  • 2 cups powdered sugar
  • 1-2 tablespoons non-dairy milk (I like almond milk)
  • 1/2 teaspoon of vanilla extract

INSTRUCTIONS:

  • Preheat oven to 325 degrees and line the baking sheets with parchment paper.
  • In medium bowl, sift together flour blend, cocoa powder, baking powder and salt.
  • To melt chocolate chips, place into small bowl and microwave 30 seconds. Stir and microwave an additional 15 seconds. Do this until it is smooth.
  • In large mixing bowl, mix melted chocolate, together sugar, brown sugar, applesauce, almond milk, oil, maple syrup and vanilla. Add flour mixture and stir until dough is well combined.
  • Place dough into a ziplock bag with the corner eventually cut open. On prepared cookie sheet, squeeze out the dough into a heart shape. If the hearts don’t work for you, just opt for good old circles.
  • Bake cookies 15-17 minutes. Cookies will be soft to the touch. Place on cooling rack to cool completely.
  • To make filling, cream shortening until soft, about 1 minute. Add powdered sugar, almond milk and vanilla. Whip until fluffy.
  • Assemble cookie sandwiches by putting the filling onto one side of the cookie and topping with another. Repeat with remaining cookies.
